Easy to bake Home-made Coffee & Chocolate Chip Cookies

1. INTRODUCTION

Who doesn't like cookies? Cookies bring fond memories of childhood, however even as an adult having a cookie or two is a guilty pleasure everyone needs every now and again. What about an adult version of the traditional chocolate chip cookies? Well we just added coffee to it which will do as a nice treat during a well deserved coffee break, and since they have coffee infused, then we have an excuse to save them all for the grown ups!

2. INGREDIENTS

  • ½ cup unsalted butter, softened but still cool to the touch
  • ⅓ cup brown sugar, packed
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups all purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 3 teaspoons ground coffee powder Sublime Rosso 'Napoli'
  • 1 ½ cups chocolate chips, divided

 

3. PREPARATION

  • Preheat oven to 180°C. Line two baking sheets with parchment paper. Set aside.
  • Beat butter and sugars for several minutes, until light and fluffy.
  • Add egg and vanilla and beat until combined, scraping the bowl as needed.
  • In a separate bowl, combine flour, baking powder, baking soda, salt, and ground coffee powder.
  • Add the dry ingredients to the butter mixture and mix on low speed until just combined. Stir in 1 cup of chocolate chips.
  • Roll the dough into 1½ tablespoon balls (Use a cookie scoop to keep the size consistent).
  • Set on the prepared cookie sheets, leaving a 5cms in between for spreading.
  • Press the remaining ½ cup of chocolate chips, onto the tops of the mounds of dough (this will help the chocolate chips be more visible).
  • Bake for 9-12 minutes, until the edges are set but the centers of the cookies are still under baked.
  • Place the baking sheets on wire racks and let the cookies cool completely.
  • The cookies will firm up as they get cold.






4. SUGGESTIONS

Store cookies in a container with lid at room temperature for up to 3 days. You can freeze the cookies for up to 3 months if you wish, then defrost when needed. Do not refreeze the cookies once defrosted.
